Spanish researchers have developed an "electronic tongue" - any device that measures and compares taste via sensors - that can identify different types of Spanish cava, a sparkling wine that is comparable to French champagne. There are 5 different types of cava, classified by the amount of sugar present in each, which the electronic tongue measures with its sensors.

The importance of this electronic tongue is that these bioengine
ers of the Group of Sensors and Biosensors in the Universitat Autonoma de Barcelona have found a way to mimic human tongue sensors. Although this step seems relatively basic, it can potentially be a gateway to new possible biomedical devices, such as a tongue transplant, or even a food-testing kit that could ensure that people with severe food allergies do not ingest the wrong food - which might save them from needing that EpiPen.
